We know you have been waiting for it, and here it is! Our recipe of the month is Pumpkin Energy Bites.
You can find the recipe here www.prfoodcenter.org/spice-drive. Tasty, delicious, and packed with protein, fiber, and other nutrients, these energy bites are sure to be a huge crowd pleaser.
Pumpkin puree is such a great, versatile, and mild flavored fruit that can be served sweet or savory. Add it to your pancake or waffle mix, spice up (like my pun?!) your oatmeal, add it to your chili for a nutty flavor (trust me it's good!), or even make a creamy pasta sauce from pumpkin, broth, milk, and seasonings! It's uses are endless. There is a great article to find some unique, budget friendly recipes https://greatist.com/health/pumpkin-recipes-every-meal.
Spice Drive 2.0 is helping build pantries and resources to create budget friendly, versatile, and delicious foods. Donations from community members is an integral part of this program, so we want to take a moment to thank all of you who donate at Save-A-Lot and Dollar Tree each and every month. Without you this program would not exist. Did you know you can also donate to Spice Drive right on our website? Just click the Donate Button found on several pages and in the notes write in you want your donation going to Spice Drive. $12=1 year of spices for a food cupboard customer!
On top of helping the food cupboard, Charlotte White Center's Rising Stars also volunteer to come and help us prepare (and taste test!!) our recipes each month. Our partners at Mayo Regional Hospital help with the making of the recipe as well as a nutrition class while cooking. They take their work very seriously and love being the product testers for the recipes!
